Here's another little recipe/sequence we shot in Opus a few months ago.
This is my twist on an octopus and potato salad.
The octopus is blenched first, then sliced quite thin; the potatoes are boiled, mashed, forced through a strainer and whipped with olive oil and an idea of garlic;
Capers are fried in a skillet with just a bit of vegetable oil, until they pop open and crisp up.
The chile oil is just olive oil simmered with all the remnants of dry chillies (guajillo, cascabel, ancho, morita...), blended and filtered.
Easy, easy.... and looks great!
