This one came up a few minutes ago; wanted to do something out of leftover chickpeas from lunch and roasted chicken from yesterday's dinner....
Made blue corn tostadas, blended the garbanzos, used parsley instead of coriander and made a salsa with toasted chiles de arbol,onion,garlic and tomatoes.
Garnished them with onions pickled in lime juice,avocado,bib lettuce and heavy cream.
A keeper!
